Christmas just got a whole lot better with this classic, savory, simple mushroom toast. It’s buttery, full of herbs, and so simply good. I’m pairing it with Lavender & Vanilla DRY Sparkling for the last Christmas Giveaway of the week!

Wrapping up this amazing week in the best way possible: sipping DRY Sparkling & snacking on mushroom toast. Does it get any better!? This is the perfect combination for any holiday party this year. I for one will be serving this up on Christmas day, along with all of our other appetizers. The mushroom toast is really easy to make, yet is so rustic and satisfying in every way.

I add lots of herbs to the mushrooms to bring out all the fresh, earthy flavors while they saute until golden brown. The bread gets toasted with a slather of softened butter. And then the creamy, somewhat sweet creme fraiche is spread right on top. It’s the perfect base for a mound of bubbling mushrooms.

And all of this wouldn’t be complete without a sip of DRY Sparkling in between each bite.

I have loved serving DRY Sparkling at all my holiday parties for awhile now. It’s the perfect non-alcoholic option to have for your guests. Each flavor is so uniquely crafted that it feels like you’re drinking something completely special. Especially if you don’t drink alcohol or if you just need a break, these sparkling sodas need to be your go-to. I also love that they can add a whole new intoxicatingly good flavor to cocktails as well.

I mean, what is not to love!?

Both Lavender & Vanilla DRY Sparkling work perfectly with this mushroom toast. I love the contrast of a subtle sweet/floral flavor with the earthy, rich mushrooms. I keep things nice and festive by serving the sodas in pretty glasses with an orange slice & a few herbs…highly recommend doing this!!

classic, savory, simple mushroom toast with crème fraiche & lots of herbs

yield: 6 large toasts (or cut into 12 appetizer servings)

Ingredients

Scale
  • olive oil, as needed
  • 1 lb cremini mushrooms, halved (or quartered if large)
  • 4 oz shiitake mushrooms, trimmed
  • kosher salt, as needed
  • freshly cracked black pepper, as needed
  • 2 large shallots, thinly sliced
  • 4 garlic cloves, minced
  • 4 sprigs fresh thyme, plus leaves for garnish
  • ¼ cup white wine
  • 1 tbsp chopped parsley, plus leaves for garnish
  • 6 slices Italian or country bread (about ½” thick)
  • 4 tbsp butter, softened
  • 1 small container crème fraiche

Instructions

  1. Preheat the oven to 400°F.
  2. Heat a large sauté pan over medium-high heat. Add enough olive oil to generously coat the bottom of the pan. Add half of the cremini mushrooms. Stir well and let sauté for a few minutes until golden. Lower the heat the medium if needed. Once browned, season with salt and black pepper. Transfer the mushrooms to a plate.
  3. Repeat with the remaining cremini mushrooms and then the shiitake mushrooms, adding more olive oil as needed. All the mushrooms should now be combined on the plate.
  4. To the sauté pan, add a little more olive oil and the shallots. Let cook over medium heat until tender and caramelized. Stir in the garlic and thyme sprigs. Cook for another minute.
  5. Stir the mushrooms back in. Deglaze the pan with the white wine. Let cook until the wine is fully evaporated. Season with salt and pepper to taste. Keep the mushrooms warm until serving. Stir in the parsley at the very end.
  6. Meanwhile, place the slices of bread onto a sheet pan. Spread the softened butter over each slice. Toast in the oven for 6 minutes. Let cool for a few minutes.
  7. To assemble, spread the crème fraiche onto each slice of toasted bread. Top with the mushroom mixture. Garnish with fresh thyme and parsley leaves. Serve warm.

  1. This looks awesome!!! Seems like a fall/winter dish because of the mushrooms, but the creme fraiche lightens it up so it could even be enjoyed all year!! Definitely making this soon!

  3. For anyone that might not know, creme fraiche (epaisse or other) is very cheap and easy to make at home with cream and a spoon of cultured buttermilk
