Peanut Butter and Jelly Brownies

Nostalgic peanut butter and jelly brownies. This is the perfect treat for when you want something rich and comforting that is so incredibly simple to make. Classic brownie batter topped with dollops of peanut butter and your favorite jelly, baked until fudgy, and cut into squares. These are absolutely delicious and will bring you right back to your childhood.

Ending the week on a sweet note! Because every Sunday could use a little chocolate and something fun to bake up. And I’d say these brownies are the perfect treat.

I basically took my favorite classic brownie recipe and added creamy peanut butter and sweet jelly swirled over top to create the MOST delicious and nostalgic peanut butter and jelly brownies.

These brownies could not be easier to make. You’ll mix together your dry ingredients, then the wet ingredients, combine the two, and you’ve got your batter. The batter has lots of melted butter in it to keep these brownies nice and fudgy when they bake. They’re also flavored with a very generous amount of vanilla extract, which gives a really beautiful rich hint of sweetness.

The special touch? Large dollops peanut butter & jelly! Spooned right over the batter before baking. I used my favorite cherry preserves that I had on hand, but you can use whatever jelly/preserves you’d like! Once dolloped, you’ll just take a small knife and run it through the batter in horizontal and vertical motions, creating a marbled pattern on top.

Bake, cool, cut…and of course, you can add a little sprinkle of flaky sea salt to bring out all of the sweet, chocolatey flavors of the brownies!

quick note on the peanut butter…

If you’re using a natural peanut butter with minimal ingredients, it’ll most likely already be spoonable right out of the jar. If you’re using a more classic peanut butter like Jif, you’ll want to heat it for 30 seconds or so in the microwave for it to loosen up.

easy, fudgy peanut butter & jelly brownies

yield: 1 (9×13”) pan brownies

Ingredients

  • 1 tbsp softened butter, for greasing
  • 1 cup all-purpose flour 
  • 1 cup cocoa powder
  • ½ tsp kosher salt
  • 4 eggs
  • 2 cups granulated sugar
  • 2 sticks (½ lb) butter, melted 
  • 2 tbsp neutral oil
  • 1 tbsp pure vanilla extract
  • ½ cup (approximately 6 oz) creamy peanut butter
  • ½ cup (approximately 6 oz) jelly or preserves*
  • flaky sea salt (optional)

Instructions

  1. Preheat the oven to 350°F. Grease a 9×13” baking dish with butter and line it with a piece of parchment paper (allow a few inches of paper to hang over the dish). Grease the parchment with more butter. 
  2. In a mixing bowl, whisk together the flour, cocoa powder, and salt. In a separate large mixing bowl, beat the eggs until frothy. Add the sugar and whisk aggressively until well incorporated. The mixture should be thick and pale yellow. 
  3. Mix in the melted butter, oil, and vanilla extract. Pour the dry ingredients into the mixture, whisking until incorporated. Pour the brownie batter into the prepared baking dish, using a rubber spatula to spread it into an even layer. 
  4. Dollop the batter with the peanut butter and jelly. Run a small knife through the batter in vertical and horizontal lines until you create a swirled, marbled pattern. 
  5. Bake the brownies for 30-35 minutes, or until *just* cooked through. Let the brownies cool in the pan for about 15 minutes. 
  6. Transfer them to a cutting board by lifting the parchment paper. Use a serrated knife to cut the brownies into 18 or 24 squares. Sprinkle with a little flaky sea salt. Eat warm or at room temperature.

Notes

*I used cherry preserves for these brownies, but you could use whatever flavor you’d like! Grape jelly would be great for a classic pb&j taste.
