Right now, movies and tv shows are truly such a comfort. After a long day or busy week, it is the best feeling in the world to be safe at home and able to curl up on the couch with a good show. I know some don’t have this luxury, so I’m beyond thankful for this simple pleasure.

And I bet most of you are in the same situation, with your weekend activities being replaced by Netflix and *hopefully* a really good meal (my favorite weekend dinner lately has definitely been this simple baked rigatoni).

As always, I like to make a little sweet snack when watching a good movie, and this popcorn chocolate bark is the BEST thing to munch on.

It’s the simplest recipe (more of a method, really) that you can have fun with and make your own. Chocolate is melted, spread onto a piece of parchment paper, topped with loads of fun fixings, chilled, and then broken into pieces. You can play around with it and throw on any ingredients you have that sound good to you – think toasted nuts, dried fruits, seeds, etc.

Instructions

  1. Place a piece of parchment paper onto a sheet pan. Melt the chocolate and pour it onto the parchment. Use a rubber spatula to spread it into an even layer, a little less than ¼” thick.
  2. Evenly distribute the popcorn, pistachios, golden raisins, dried currants, and rose petals (or whatever toppings you choose) onto the melted chocolate. Press lightly to secure the ingredients.
  3. Place the sheet pan in the fridge and chill for at least 30 minutes, or until the chocolate hardens. Break the bark into random pieces.

Notes

Melt the Chocolate in the Microwave: Place the chocolate in a microwave-safe bowl and heat in 30-second increments until the chocolate is 90% melted. Remove the bowl and stir until the chocolate has fully melted.

Melt the Chocolate in a Double Boiler: Fill a small saucepan with a ½” of water. Place over medium-low heat on the stove and bring to a simmer. Add the chocolate to a stainless-steel mixing bowl and place the bowl over the saucepan. Stir the chocolate until it is 90% melted. Remove the bowl and stir until the chocolate has fully melted.

Storing: Store the chocolate bark in an air-tight container in the fridge for up to 10 days.
