The best part of a frittata is it’s versatility. Take this garden frittata and add any spring vegetables you have on hand. In mine I’m using fingerling potatoes, fresh peas, fennel, scallion, and spinach. Topped with creamy goat cheese and finished with fresh chives. It’s beautiful, simple, and perfect for a lazy weekend breakfast.

Sharing a really fun recipe today: jammy eggs with croutons & whipped feta. It’s playful, colorful, and makes spring feel like it’s right around the corner. The base is a layer of creamy whipped feta + greek yogurt, topped with softly boiled jammy eggs, homemade crispy croutons, tangy cucumbers and radish, and lots of fresh herbs.

Sharing a flavor-packed breakfast recipe tonight in the form of mexican baked eggs. Full of chorizo, a variety of sweet + spicy peppers, garlic, chipotles, adobo sauce, and fire-roasted tomatoes. Finished with fresh toppings and served with charred tortillas. It’s an easy recipe that’s impossible to resist.

Baked Eggs with Walnut Pesto

Baked Eggs with Parsnips & Walnut Pesto

Sharing one of my favorite breakfast dishes today: baked eggs with parsnips & walnut pesto. It’s healthy, satisfying, and has a “straight from the market” feel to it. Crispy parsnips mixed with lots of greens on the bottom, eggs baked until set and runny right on top, and then a vibrant, earthy toasted walnut pesto spooned over it all. I add a little goat cheese and more herbs right on top, too.
